A simple skillet dish to make that 'Mooos' and 'Squeals' with flavor.
- 1 pound of Miles Smith Farm Beef/Pork Mix
- 2 TBSP of Olive Oil
- Veggies - lots - Chopped, a great time to use leftover veggies - about 4 cups or so of chopped veggies. Some suggestions might be: parsnip, carrot, potato, Rutabaga, red peppers, mushrooms, onion, broccoli, greens
- Cheese about 8oz or so that is the melting kind (Cheddar, Muenster, Monterey Jack, Swiss)
- Salt and pepper to taste.
This is a great recipe that can use leftover veggies, baked potato, broccoli, carrots, greens, red pepper, etc. If all the great veggies have been eaten up, use an assortment of what ever fresh veggies are in the fridge. The more the merrier and the more colorful the dish will be. Everyone likes to eat colorful dishes.
Whatever veggies you are using, prepare them by cutting them up into bite size pieces. This allows them to cook fast as well.
If using left over veggies just cut up and set aside in a bowl for now.
If using fresh uncooked veggies (or a combination) cut them up seperately into bite size pieces. You will add the uncooked veggies to the skillet first, and then add the leftover veggies.
Slice you cheese as thin as you can or grate the cheese. Set aside.
If using fresh veggies: Heat a cast iron skillet or other type of skillet to medium/high heat and add the olive oil. Add the root vegetables first. potatos, carrots, parsnips, rutabaga, etc. Saute for 5-6 minutes. If you have other fresh veggies that are not root vegetables, peppers, mushrooms, onions, garlic, etc. add these next and saute for another 5 minutes, stiring often. If you have fresh greens, add as the last vegetable and saute for 2-3 minutes, just until they start to wilt.
If using all left over veggies: Heat the skillet and add them all at once to the skillet to heat up. Saute for about 5 minutes to heat them.
If using a combination of fresh and left over: Follow the fresh veggies preparation and then add leftover veggies all at once.
Add salt and pepper to taste.
Next, add the uncooked ground beef/pork mix to the skillet, breaking it apart with a firm spatula (I like wooden ones) right in the skillet. Keep breaking it apart until it is in small pieces and you will see that it is cooking in the skillet at the same time. Keep stirring.
Once the meat is cooked through and mixed in with the veggies, turn the heat down as low as possible, place the sliced or grated cheese onto the top of vegetable/meat mix and cover for about 5-7 minutes. Heat just until the cheese is melted. Turn off.
Make a simple salad to go with the simple skillet dish and you have a fabulous, healthy, simple meal in minutes.
