Easy Beef Stew

Easy Beef Stew

Many stew recipes call for cooking the meat and vegetables at the same time, leaving the latter overcooked and mushy. Instead, first braise the meat with onions in red wine and beef broth until a rich sauce develops. Then, after about an hour, add carrots, celery, and potatoes. By the time the vegetables are cooked, the beef will be tender, then just stir in some peas for a little freshness and color. Spoon the stew over egg noodles or celery root purée, or just pass around plenty of crusty bread to scoop up all the rich sauce. Total Time: 2 hrs 45 mins. Makes: 4 to 6 servings.


Main Ingredients:

  • 1 (3-pound) boneless chuck roast
  • 1 cup dry red wine
  • 4 medium Yukon Gold potatoes (about 1 1/2 pounds)
  • 3 medium carrots

Highlander Beef Stew in Red Wine and Brandy Sauce

If there is too much for one meal, you can freeze the rest and enjoy another lovely meal when you do not have the time to cook. The same recipe can also be used with game meats like venison, buffalo, .... Serves 4-6 people.

Grass Fed Corned Beef Brisket

Corned Beef Brisket

Making your own Corned Beef is a wonderful way to prepare a Brisket without all the added chemicals. It is fairly easy, but does take forethought because of the brining time, but worth it. A couple of things to note: this corned beef will most likely be less salty than a commercially prepared version. It will also be darker in color as it does not have the added chemical (Salt Peter -potassium nitrate or Sodium Nitrite) which would keep the meat, "pink". You will sometimes see," Pink curing salt", listed in some recipes.

Lamb Shoulder Roast

Lamb shoulder roasts make a great oven roast.

This is a general recipe on cooking oven roasts.

Oven roasts vary, but these are usually higher end (more expensive) cuts of beef.  Beef is priced by two things, tenderness and availability.

Not all beef is created equally, but all beef can be cooked to a delicious flavor and tenderness.

Overnight Apple Cider Pork Ribs

Pork ribs have a lot of flavor, offer excellent nutrition and can be cut into individual ribs for easy to eat finger foods for tailgating or watching football games.

There are a variety of ways to cook awe inspiring, delicious pork ribs, but for simplicity and because all of us are just ‘crazy busy’ with life, I recommend this simple oven, then BBQ finishing method for pork back ribs.

  • 2-4 pounds of pork ribs
  • Liquid Smoke
  • Apple Cider or Honey
  • Salt and Pepper

Need a tasty dinner but that roast is still frozen? No worries - a pressure cooker or Instant Pot will cook it to tenderness.

Pulled pork when made with locally raised, pasture fed pork is delicious as well as easy to cook.

Pulled Pork - On The Grill!

It can be difficult to create pulled pork with a smokey flavor on a gas grill. The trick is to cut pork butt into 3 pieces which gives the smoke more area to flavor. Slat the pork overnight then put it directly on the grill from the refrigerator. The cool temp of the meat will encourage the smoke to condense on the surface.

The best way to get the most from your wood chips is to soak half of them in water. This delays when they begin to smoke. Make your foil packets the right size to sit on your grill. Make sure they have the right size and number of openings to let in oxygen so the chips smolder-not burn.

Summer Roast Beef

Too hot for a roast?  Here's a summer solution!  Cook smaller roasts, cool and slice very thin for luncheon meat.  The great news is that the meat can be roasted three days ahead of time and will be delicious served cold.  Be sure to pour the meat juices over the roast beef slices to help keep the meat tender and moist.

This simple to prepare casserole can be made the day before. If refrigerated, bring to room temperature before baking. Left overs heat up well and are great for breakfast or lunch. Serve with a vibrant green vegetable for the addition of color.

Remember when cooking it is a fun way to be creative and experiment. I think about what is on hand and what blends might taste good together. Give it a go - you  just never know.   This is a gluten free recipe.

Why marinade?  Marinades add flavor and tenderize meats, poultry, tofu and vegetables.  Grass fed beef has less fat, which is healthy, however the fat can help tenderize the meat.  Therefore, one of the many ways to help keep grass fed meat tender is to marinate it.

  • Soy sauce (don't be shy, add enough)
  • Ginger (freshly grated or dried - candied works too) to taste
