A great potato salad with added summer sausage and bacon for a full flavored dish.
Cook potatoes in boiling water over medium heat 15-18 minutes until no longer crunchy, but still hold shape. Drain. Let cool slightly.
Place potatoes in a large bowl. Add all prepared and chopped vegetables. Mix well.
Add mayonaise, sour cream and optional mustard with salt and pepper to taste. Mix well.
Taste to adjust seasonings. Cover and chill.
Garnish before serving.
