Strip Steaks

Overview: 

A simple steak with great taste and ease of preparation.

Ingredients: 
Miles Smith Farm Grass Fed Strip Steaks (one per person)
Salt, pepper and garlic mix (Two Sisters Garlic mix)
Mushrooms, washed and sliced, locally raised
Onions, sliced
2 Tablespoons of Butter
2 Tablespoons EVOO (Extra Virgin Olive Oil) or oil of choice
1 cup beef bone broth (homemade)
2 Tablespoon cornstarch
Preparation: 

In a skillet, add EVOO and Butter, melt on medium heat.  Add onions and mushrooms and saute until onions are clear and wilted.

Prep steaks, by sprinkling with salt, pepper and garlic mix to taste. Add to hot skillet and cook on medium heat until the skillet releases the steak. Flip the steak over and cook on the other side until released.  If you like your steak cooked well, leave in the skillet longer, but this will dry out grass fed beef and make it tough.   You can cover the steaks to hold in the moisture. Remove the steaks when cooked and allow to "rest" for 5-7 minutes.

If you would like a sauce: add cornstarch to 1 cup of good beef bone broth and mix well. Pour into skillet once the steaks are removed.  Add the onions and mushrooms to the broth and simmer, stirring constantly, (a whisk is good for this), until thicken. Usually about 5-10 minutes. 

Serve sauce over steaks. 

Add a garden salad or favorite veggies and you will have fantastic local meal!
