Potato Salad with Summer Sausage and Bacon
Overview: 

A great potato salad with added summer sausage and bacon for a full flavored dish.

Ingredients: 
2-3 pounds of red potatoes, chopped
1/4 lb Miles Smith Farm bacon, cooked and crumbled
3 oz Miles Smith Farm summer sausage, chopped
1 stalk celery, finely chopped
1/2 red pepper, finely chopped
1 small red onion, finely chopped
3/4 cup mayonaise
2 tablespoon mustard (optional)
1/4 cup sour cream (optional)
Salt & Pepper to taste
Garnishes: paprika, parsley. cherry tomato
Preparation: 

Cook potatoes in boiling water over medium heat 15-18 minutes until no longer crunchy, but still hold shape. Drain. Let cool slightly.

Place potatoes in a large bowl. Add all prepared and chopped vegetables. Mix well.

Add mayonaise, sour cream and optional mustard with salt and pepper to taste.  Mix well.

Taste to adjust seasonings.  Cover and chill.

Garnish before serving.
