An easy, inexpensive and healthy soup.
2 Quarts chicken broth
4 TBSP olive oil
2-3 carrots, chopped
1 onion, chopped
2 cloves garlic, minced
2 stalks celery, chopped
3-4 potatoes, chopped
2 cans tomatoes, chopped or mashed
1 pound Miles Smith Farm Ground beef
1 can each; Garbanzo beans, Kidney beans, Cannellini beans.
1/2 pound Pasta
2 tsps Basil, Parsley
1 tsp Marjoram
1/2 tsp Thyme
pepper, salt to taste.
Saute the minced garlic, chopped onion, carrots and celery in olive oil in a stock pot. Saute for 10 minutes.
Add the broth, canned tomatoes (mash with your hands), seasonings to a stock pot with the sauteed vegetables. Simmer for 20-40 minutes. Add the ground beef - break apart with your hand and sprinkle it into the soup. Bring the soup back to a simmer.
Add the beans, bring to a simmer again.
Add the pasta. Once it is added cook 7 minutes or until done. Add salt and pepper to taste and serve.
